Feuilletine, or pailleté feuilletine is a crispy confection made from thin, sweetened crêpes. The crêpe batter is baked for a few minutes, and the crêpes are allowed to cool; as they cool, they become crisp. In French, these crispy crêpes are called crêpes gavottes or crêpes dentelles; but when crumbled into small shards, they become feuilletine. Feuilletine is decorative and has a buttery flavor, but it is especially valued for the unique texture it adds to dishes. It is sometimes incorporated into praline, hazelnut paste, and other nut pastes. Although feuilletine is produced commercially, it was originally conceived as a way for a pâtisserie to make use of cookie scraps.

The use of the ultrasonic technology is suitable to cut soft, creamy, sticky and multi-layer products as well as fresh and frozen products. The ultrasonic blade allows for a consistently neat and even cut, while products containing additional ingredients, such as fruit or nuts, can be cut cleanly without dislodging the filling or distorting the product shape. The necessary force for cutting will be reduced by up to 90 %. Minimum offcuts and at the same time rapid, variable, accurate and neat cuts – with smooth cutting edges. The shape of the cut product will only be modified a little. Ultrasonic cutting technology is a progressive industrial technique that uses high frequency vibrations to cut through materials with precision. Using the high frequency vibrations of the blade, we can drastically reduce the friction between the product and the blade, allowing for superior quality cuts, even when processing delicate, soft or crumbly products. The long durability of the knife reduces production downtimes.
